Traditional foods such as pasteles, arroz con dulce and coquito are still served today during the festive period, making Puerto Rican Christmas a little different from most.
Coquito is not dissimilar to the traditional English Eggnog recipe. However, the Puerto Rican adaptation uses coconut, a popular ingredient used in drinks and desserts.

Cook time: 30-45 mins (chilling)
1 can evaporated milk
1 can cream of coconut
450ml fresh coconut milk or 1 can coconut milk
2 egg yolks
1 tsp vanilla extract
½ tsp ground cinnamon
225ml white rum

- Add the evaporated milk, cream of coconut, coconut milk, egg yolks, vanilla extract, ground cinnamon and rum into a blender. Blend on high speed until the mixture is thick, creamy and well combined, usually around 2 minutes.
- Pour into bottles and refrigerate until chilled.
- Remove from refrigerator, shake well and pour into glasses. Serve with a sprinkling of ground cinnamon and a cinnamon stick in each.
