Lisa Marley’s Chocolate Guinness Cupcakes

Pastry Chef Lisa Marley is working in partnership with Britannia Living to develop exciting recipes for every month of 2017.

As it’s St. Patrick’s Day this month, I thought I’d rustle up some cupcakes as a little celebratory nod to Ireland. I love Guinness and I love cupcakes, so this recipe of mine is a match made in heaven really and the perfect excuse to indulge!

Start by lining a muffin tray with 10 cases and pre-heating the oven. A good tip is to make sure all of your ingredients are at room temperature. Cream together the butter and sugar then slowly add the egg, Guinness and lastly the cocoa power and flour. Spoon or pipe your mixture into the cases and bake for 20 minutes or until a skewer comes out clean then allow to cool.

For the frosting, I find a cream cheese mixture works really well with the chocolate and Guinness. Once your cupcakes have cooled, spoon on the frosting and you’re ready to decorate. I like to sprinkle on some cupcake crumbs, but this is where you can get creative!



250g butter

250g caster sugar

2 eggs

250ml Guinness

280g plain white flour

3 tbsp cocoa powder

2tsp bicarbonate of soda

Cream cheese frosting:

50g butter

300g icing sugar

125g cream cheese



Whip the butter and sugar

Add egg

Add Guinness

Add cocoa powder and flour

Spoon into muffin cases

Bake for 20 minutes

Allow to cool

Spread frosting and decorate
