Goats cheese & basil pizza

This recipe will make 1 x 12in or 2 x 6in pizzas. Use as a base

for all your flat bread or pizza recipes.

 

Serves: 2 – 4

Preparation time: 20 minutes

Cooking time 25-30 minutes

Quickstart 180°C

Pizza function 180°

(For older cookers without Pizza function

Quickstart 200°C

Bottom heat 200°C)

 

Use Britannia’s basic pizza dough recipe

 

Topping:

1 onion, finely sliced

1 clove garlic, chopped

1 tsp dried basil

1 x 400 g can chopped tomatoes

Salt & freshly ground pepper

Sun-dried tomatoes in oil, chopped

1 x goat’s cheese

Fresh basil leaves

 

To prepare the topping:

Heat 1 tablespoon of oil from the sun dried tomatoes in a small saucepan; add the onion and garlic and cook for 5 minutes or until the onions are soft.

Add the basil, canned and sundried tomatoes and cook for a further 10 minutes, until the sauce in fairly thick. Season to taste. Position an oven shelf 2 shelf positions from the bottom of the oven. Using the Quickstart function preheat the oven to 200°C, then select pizza function (range cookers manufactured after March 2008) or bottom element function.

 

To prepare the pizza:

Spread the tomato sauce over the pizza base and top with slices of goat’s cheese. Sprinkle a little more sun dried tomato oil over the pizza. Place the pizza in the oven and cook for 25-30 minutes until crisp and brown.

 

Tip: Use mozzarella cheese instead of goat’s cheese.
